There is one particular recipe that is a personal favorite. The Cohasset Chocolate Mousse Cake with Whipped Cream Frosting (pg. 209).
Eating it, you’d have no clue that this cake is completely flourless (and gluten free). The recipe is user friendly and extremely practical (i.e. eggs need to be separated, but you end up using ALL of the eggs. You aren’t stuck with extra egg whites or yolks). Plus, it’s incredible how a single batch of chocolate mousse can be used to create a layered cake like this one.
