Ingredients
  • 3 lbs chicken drumsticks
Marinade
  • 3 tbsp sriracha sauce
  • 3 tbsp soy sauce
  • 2 tbsp white vinegar
  • 2 tbsp toasted sesame oil
  • 2 tbsp honey
  • 1 tbsp avocado oil
  • 1 tbsp fresh ginger grated and peeled
  • 2 tsp smoked sea salt
  • 1 tsp black pepper
  • 1 tsp fresh lime juice
  • 3-4 drops liquid smoke
Topping
  • ½ cup fresh cilantro chopped
  • 3-4 stalks of scallions chopped
  • 1 jalapeno chopped
  • Lime wedges serve on side

  1. Wash and thoroughly dry the chicken pieces using a paper towel.
  2. In a gallon-sized Ziploc add all the ingredients for the marinade and mix till they are combined. Add the chicken pieces and toss well to coat them all with the marinade. Let the chicken marinate for minimum 30-45minutes at room temperature or in refrigerator if keeping for longer time. Flip the chicken at-least once while marinating.

  3. Pre-heat the oven to 400 degrees F.
  4. In a large baking-dish, place the marinated chicken pieces and marinade in a single layer.

  5. Bake for 30 minutes then flip the drumsticks and brush marinade over the top. Return to oven for another 30 minutes.

  6. Remove chicken from oven and set the broiler to low. Flip the drumsticks and brush marinade over the top again. Broil for 10 minutes. 

  7. Remove from broiler. Allow the chicken to cool and sauce to thicken for 10 minutes.

  8. Brush drumsticks with thickened marinade then place chicken on serving platter, sprinkle with topping and serve immediately.

Recipe Notes

You can adjust the topping as per your preferences. You can also grill the chicken if you like. If grilling, I marinade chicken the day before then cook on grill without the marinade.
