Egg Salad with Fresh Herbs & Lemon

Ingredients
  • 6 eggs hard-boiled + peeled
  • 1 small shallot
  • 2 T chives finely chopped
  • 1 T parsley finely chopped
  • 1/4 cup mayonnaise
  • 1 T fresh lemon juice
  • 1/8 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
Instructions
  1. Finely dice the 6 cooked eggs, whites and yolks.

  2. In a bowl, mix the chopped eggs with the remaining ingredients. Save some fresh herbs for a garnish.

  3. Serve immediately or cover and chill for an hour.
