A lovely weeknight dinner for the family. Or make these for a group of friends and let them design their own pizza waffles with their favorite toppings.
Preheat the oven to 375º F. Thinly slice onion and green pepper about 1” in length, and cut tomatoes in half. Lightly coat the veggies and tomatoes with olive oil and a sprinkle of salt, and arrange them in separate groupings on a single baking (lined with parchment paper). Take the 4-5 cloves of garlic (with peels intact), lightly coat them with olive oil and add them to the baking sheet with the veggies. Roast for 35-40 minutes.
While the onions, peppers, tomatoes, and garlic are in the oven, begin preparing the batter for the waffles. In a large bowl, sift together the dry ingredients. Separately in a small bowl, mix together the wet ingredients and then slowly mix them into dry ingredients.
Using a ladle or measuring cup, pour the batter into the waffle iron—just enough to cover the bottom portion of the waffle iron. Cover and cook for 5-7 minutes until the waffles achieve a sturdy texture with a golden brown color.
Thoroughly mix together all of the ingredients for the pizza sauce. You want a thick texture—comparable to a paste. Add a few more drops of water, if necessary.
Pizza assembly can officially commence. Decorate your individual waffle with your favorite toppings. Even sprinkle some cheese on the waffle prior to spreading on the sauce. Have all the of assorted toppings diced or thinly sliced and presented on a tray or in individual bowls. Makes for a crowd-pleasing and family-friendly meal.
Take your fully assembled pizza waffles and place them on a baking sheet. Keep them in the freezer for 60 minutes. Set a timer, so you don’t forget! Take the frozen waffles and store them individually in quart-sized freezer-safe zip top bags. Or you can individually wrap each waffle with parchment paper and seal with a piece of tape. Be sure to label them! Then store the wrapped waffles in a large freezer-safe bag. Pull them out as needed.
Place the frozen pizza waffles (unwrap them from the parchment paper, if necessary) onto baking sheet and slide them into an oven that has yet to be turned on. Turn the dial to 375º F and let the waffles gradually defrost and warm up as the oven preheats. By the time the oven buzzer rings, they should be ready to eat!
